Chef Nathan Green, a culinary virtuoso from Birmingham, England, has built an illustrious career defined by his exceptional skills across a diverse array of cuisines, including French, Japanese, Spanish tapas, steak, seafood, Italian, and Chinese. Beginning his culinary journey at the age of 14 in a local British pub, Nathan's trajectory in the culinary world has been marked by significant achievements and global experience.
Nathan's formal training commenced at the prestigious 2-Michelin-starred Gidleigh Park under the mentorship of the legendary Chef Michael Caines. He then honed his craft in some of London's most esteemed kitchens, including those at Tom Aikens, The Square, Arbutus, and Restaurant Story.
In 2014, Nathan's culinary adventure took him to Hong Kong, where he led Jason Atherton's celebrated tapas bars, 22 Ships and Ham & Sherry. His partnership with Yenn Wong's JIA Group led to the opening of Rhoda in 2016, a restaurant that highlighted his passion for sustainable, nose-to-tail cooking and live-fire grilling. Rhoda was a tribute to Nathan's grandmother and epitomized his philosophy of unpretentious, heartwarming cuisine.
Nathan's expertise continued to shine at Henry, a Southern-style steakhouse at Rosewood Hong Kong, which opened in 2019. However, his culinary prowess extends far beyond meat-focused dishes. Throughout his career, Nathan has demonstrated his versatility and excellence across various culinary traditions, earning him a Michelin chef status. His collaborations, including the opening of Rex Wine & Grill and Kilo Steakhouse with Umberto Bombana, showcase his ability to master and innovate within multiple culinary styles.
This season, Chef Nathan Green will assume the prestigious role of Executive Chef at the highly-coveted 7-star exclusive luxury private property Seasons Niseko in Japan. Before fully transitioning to this new position, he will complete a residency at Sushi-Q in Hong Kong, further honing his skills in Japanese cuisine. His relocation to Japan will allow him to immerse himself in the rich and diverse culinary scene of Hokkaido, promising a new chapter of culinary excellence.
